When it comes to chocolate, we love using dark chocolate for its bold flavor and added health benefits. Ingredients:

  • 16oz 1 block of silken tofu, room temperature

  • 5 pitted and soaked dates or 3-5 Tbsp of maple Syrup

  • 200g or 1 1/4 cup of dark chocolate chips

  • 1 pinch of sea salt

  • 26g or 2 Tbsp brewed coffee

Instructions:

1. Let the tofu come to room temperature. This helps it blend more smoothly and

prevents the chocolate from seizing when mixed.

2. If using dates, soak them remove the seeds and soak warm water for about 15 minutes.


3. Melt the chocolate. Use a double boiler or microwave in short bursts, stirring in

between, until the chocolate is fully melted and smooth.

4. Blend everything together. Add all of the ingredients—including tofu, sweetener,

melted chocolate, salt, and optional coffee—to a high-speed blender or food

processor. Blend for 3 to 5 minutes, until the mousse is silky, smooth, and creamy.

5. Chill and serve. Spoon into serving cups or jars and refrigerate for 3 to 4 hours, or until

set. Top with berries, coconut whip, or a sprinkle of cacao if desired or just enjoy as is.

This recipe makes enough to fill eight 4-ounce glass jars—perfect for individual servings. Once prepared, store them in the fridge with a lid to keep them fresh.
