MY STORY

As a child, the kitchen was my sanctuary — a space where I felt peace, curiosity, and purpose. As I grew, cooking became my love language. Creating a meal and serving something from my hands to someone else’s heart became my form of expression — my way of connecting.

 

The kitchen has always been the center of my home. Feeding people has always felt like healing — not just for them, but for me too.

 

Becoming a chef was never just a career choice; it was an extension of who I am. There’s an art to creating food — a sacredness to the process. Food is a universal language. It’s there in every culture, at every celebration, during moments of both grief and joy. It ties us all together in ways that transcend words.

MY JOURNEY INTO HEALING

My deeper journey into understanding food as medicine began in 2009, when my daughter was born with severe special needs and complex medical challenges. Her arrival shattered everything I thought I knew and pushed me to learn how to support her beyond what doctors could offer. I began to study, research, and experiment — searching for ways to heal, to strengthen, to give her the best chance.

 

Everything changed again when my youngest son was diagnosed with cancer. That moment broke me open. It forced me to go deeper — into research, into truth, and into myself. I began to see how everything we consume — physically, emotionally, and spiritually — impacts our health.

 

Alongside my children’s illnesses, I was carrying deep trauma of my own — past wounds, generational pain, and emotional weight I had never truly faced. Over time, I came to understand that healing isn’t something that simply happens to us — it’s something we choose, one small decision at a time: what we eat, what we allow, what we believe, and what we teach our children.

LIFE AT HOME: LESSONS FROM MY CHILDREN

That’s why I now homeschool three of my seven children — two of whom have complex needs. They’ve taught me more about presence, grace, and unconditional love than any textbook ever could. Every day, they remind me that healing isn’t linear — and that love, consistent, quiet, sacred love, is often the greatest medicine of all.

MY VEGAN AWAKENING

I’ve always felt drawn to a life of compassion. Even as a young child, I struggled deeply with the idea of hurting animals. I remember being around nine or ten when I realized what meat actually was — that I was eating an animal — and it devastated me. But like so many of us, I was conditioned to ignore that gut instinct. To believe it was normal.

 

In 2017, everything shifted. I came across a video showing how baby cows are ripped away from their mothers so we can take their milk — milk meant for their babies. And in that moment, I felt no separation between myself and that grieving mother cow. I saw her pain as my own. And I knew: I could no longer participate in a system that went against everything my intuition had been whispering all along.

 

That was my awakening — the moment I finally chose alignment over convenience. I’ve been vegan ever since.

LETTING GO TO BEGIN AGAIN

I had built a successful home-based bakery, pouring my heart into every cake, cookie, market, and catering event. But when my son was diagnosed, I shut everything down. I had to. My family needed me more than anything.

 

When he began recovering, I reopened — not exactly the same, but close. I tried to pick up where I left off. But something inside me had changed. I realized I wasn’t meant to return to what was — I was meant to rise into something new.

 

That’s when I began reconnecting with slower, more intentional practices — like sourdough. My starter, Lucy, became a living symbol of presence, patience, and nourishment. Today, I still use Lucy to create both nonperishable sourdough products and fresh artisan bakes that are part of my offerings — and part of my story.

 

She reminds me that living things thrive when we care for them consistently — just like us.

WHERE IT ALL COMES TOGETHER

Today, through Charity’s Vegan Kitchen, I blend soulful plant-based cooking with mindful living — teaching others how to nourish their bodies and feed their souls, one meal and one moment at a time.

 

My work is a reflection of the life I’ve lived — the lessons I’ve learned in both the kitchen and the quiet. Whether I’m creating recipes, teaching classes, or guiding others on their wellness journey, my mission is simple: to help others heal through food, compassion, and truth — from the inside out.
